Eater reveals Vu’s vision of New Vietnamese cuisine for Không Tên

West LA’s Latest Restaurant Explores Modern Vietnamese Cuisine by Farley Elliott (Aug. 27, 2018)

The new project is meant to be an LA exploration of Vietnamese cuisine, operating under the name Khong Ten.

Incoming chef/co-owner Kim Vu tells Eater that the moniker loosely translates to “no name,” a sort of inside joke that also speaks to the nature of the restaurant she’s trying to create. Vu says that Khong Ten will try to hew to staple Vietnamese foods while allowing the ingredients of Southern California to help shape the recipes and direction.
